(Magic Low Carb) Unbelievably crisp pizza with chorizo, peppers and red onions. But without flour.
"So" I say and put the board on the table with our lunch. "That's her." The man and I stare at the round thing. "Well," says the man. "Looks like pizza." - "Yes," I admit. "And he smells like that too." The man surveys the strange things up close and gently taps on the brown edge. "He's tough," he notes with Kennermine. "Absolutely." Never in my life would I have the idea to doubt the verdict of my personal pizza expert. Instead, I cut the big round into neat pieces and put two of them on the plates. The ground is perfectly together. "And what is the dough made of again?", The man wants to know. "From Cauliflower," I inform duly. "Oh," the man does. And sniffs his plate. "That would never have happened to me in my life." We take a look, then again target our plates and at the same time bite into our pizza plagiarism.
We look at each other in shock and reverence and shout at the same time the all-important word: "PIZZA!"
Of course, if someone had told me earlier that it was possible to make frighteningly good pizza dough without a carbohydrate fats, I would not have believed a word; but rather sympathetic smiled or something. Then the man came and wanted to like low carb pizza from me. He also brought along a recipe template.
I did not expect much. But who can say no to his sweetheart? Luckily! Because since noon we really want to eat it again and again and again. Who is a low carb fan and does not try it, is your own fault - just for the record.
Here comes the recipe for 1 pizza for 2 persons:
500 g of cauliflower (cleaned, without leaves, the stalk can be co-processed) in the food processor to make fine crumbs.
In Bring a pot of water to the boil, salt and cook the cauliflower rice for 4-5 minutes. Drain into a fine mesh sieve and quench with cold water. Drain well.
Place a clean dishcloth in a bowl, add the cauliflower and fold the cloth together. Squeeze as much liquid as possible from the cauliflower.
Sauté the cauliflower with 1 egg , 2 tablespoons of ground almonds , 80 g of goat cream cheese and 1 teaspoon dried oregano very well.
Preheat the oven to 180 degrees (top/bottom heat).
Line a tin with baking paper and place the cauliflower mixture on top. Form with your hands to a 1 cm thick, round flat cake and press firmly. Make the edge a little thicker.
Bake the pizza crust at 180 ° C for 35-40 minutes . If it gets too dark, cover with a piece of baking paper.
In the meantime, remove 3 tablespoons tomato paste with 6 tablespoons water , 1/2 teaspoons onion powder , 1/2 teaspoon garlic powder , 1 pinch of oregano and rosemary , salt and black pepper stir a tomato sauce. Cheese to taste and prepare the other ingredients for the topping orSprinkle with grated cheese. I sliced spicy chorizo into slices, spiced paprika and 1 small red onion in slices.
Deny Bake the pizza crust in the oven for 10 minutes until the cheese has melted and blisters.
Serve hot immediately.
The topping can be changed at will modify. For a vegetarian variant, the pizza e.g. prepare with thawed and squeezed frozen spinach, feta cheese and spicy hot peppers. Or with goat's cheese and figs. Or with grilled vegetables. Or ... huh. Thanks cauliflower.
